Steps for Vegetarian Baked Potatoes

Scrub the potato

Heat the oven to 375º. Scrub the potatoes thoroughly with a vegetable brush, but do not peel.

Pierce the potato with a fork

Pierce the potato on all sides with a fork to allow steam to escape while the potatoes bake. Place potatoes directly on the oven rack.

Bake the potato

Bake 1 hour to 1 hour 15 minutes or until potatoes feel tender when squeezed gently. Be sure to use a pot holder because potatoes will be very hot to the touch.

Serving the Baked potato

To serve, cut an X in the top of each potato. Gently squeeze potato from the bottom to force the potato open. Serve with margarine, butter or sour cream.

About the Baked Potatoes recipe

What kind of potatoes are best for baking? I strongly recommend buying Russet or Idaho potatoes, about the same size. If you want to use a combination, add margarine or butter, and sour cream or plain yogurt, this will give the baked potatoes a unique flavor. The butter is sucked into potatoes and makes them tender! Last night I had dinner with baked potatoes made in this way, and they were very successful.

My family was delighted with such a simple, yet awesome dish. You’ll know when your baked potatoes are done when they are crispy on the outside and pillowy in the middle. Sincerely, Russet are the best potatoes for baking this way. The skin is thicker, has a starchy interior with a sweet flavor (also a fluffy texture when baked), and is pretty large. It can make a good side dish or meal on its own.

 

 

Why use baked potatoes as a side dish and not as a meal on its own?

Using them as a meal it’s not so bad, but you can eat them only with a salad at most. Moreover, you’ll feel hungry in a couple of hours, and It is not so great for your weight. Using baked potatoes as a side dish, you will have a greater protein and fiber intake. This means you’ll feel full more, no matter if you choose a low-calorie main course or not. But hey, this is my opinion. If you are a vegetarian person, simple is better :D.

 

 

 

I am vegetarian, what can I combine it with?

The first thing it comes in my mind is to serve the baked potatoes with a simple mushroom dish. Or, if you want more taste and simplicity is not suitable for you, try my vegetarian stuffed mushrooms recipe, and you’ll be amazed by its taste. I have written the recipe for stuffed mushrooms to be prepared as a side dish, but if you are vegetarian, use them as the main course along with a salad.

Another vegetarian ingredient that goes well with baked potatoes is the simple broccoli dish (see in my recipe how to prepare them with ease). Or, why not eating four main vegetarian ingredients? Combine this baked potato with scallops, broccoli, and mushrooms. to do that, you’ll need the recipe for Scallops with Broccoli and Mushrooms that can be found also in my cookbook.

No matter what you’ll choose, add a salad next to it.

 

 

 

To Microwave the potatoes:

Scrub the potatoes thoroughly with a vegetable brush, but do not peel. Pierce potatoes on all sides with a fork to allow steam to escape while the potatoes cook. Arrange potatoes about two inches apart in a circle on a microwavable paper towel in the microwave. Microwave uncovered on high temperature, 11 to 13 minutes, turning potatoes over after six minutes, until tender when squeezed gently. Be sure to use a potholder because potatoes will be very hot to the touch. Let stand uncovered for 5 minutes. 

 

Here is a Bonus Tip:

The bake time and oven temperature for baking potatoes can be adjusted so that other foods can be baked in the oven at the same time. Bake potatoes in a 350ºF oven 1 hour 15 minutes to 1 hour 30 minutes, in a 325ºF oven about 1 hour 30 minutes. If potatoes are wrapped in aluminum foil before being baked, the steam cannot escape during baking, so the potatoes will be gummy instead of fluffy.
