Crazy Chicken Breast with Peaches

4 Sliced Boneless Chicken Breast
2 Fresh Peach recommended from local supplier
3/4 Cup Water
1/2 Cup Chopped Basil - Fresh recommended from local supplier
1 Eggs bio egg is recommended
2 tablespoons Butter take out the butter from the fridge with 10 minutes before preparation
1 Chopped Onion medium to large onion
1 tablespoon Pepper
1 tablespoon Salt
1/4 tablespoon squashed Lemon Zest of 1 Lemon will do
Variations
Dredge Chicken in Flour after brushing with egg
Shallots instead of onions
1 Small can of peaches instead of fresh peaches Not really recommended, but will do the trick
Chicken Broth instead of Water

Steps for Crazy Chicken Breast with Peaches

Brush the Chicken with Egg

Take the chicken breasts and brush them with egg. As a variation, dredge the chicken in flour after brushing with egg. But we like to keep it simple and let the chicken breast only brushed with the egg paste.

Saute the chicken breast in Butter

Place a large fryer pan over medium heat, put the butter in it and after 30 seconds saute the chicken breast there. Let the chicken breast cook on both sides by turning it over a couple of times; This will make the meat to cook through on both sides. This will take about 25-30 minutes. After the chicken is fried, put it on a plate (you'll use it again soon)

Peel the Peaches

There are various ways to peel the peaches.
The first method is the classical peeling with a knife. Not recommended...
A more modern way is by taking a pot of water and place it to medium heat until is boiling. Place the peaches in the pot, making sure it's fully submerged. Leave them for 30 seconds and take them out. Put the peaches immediately into a bowl of water and ice for 10 seconds. Use your fingers or a sharp paring knife to remove the peach skin.

Add Peaches, Onions and Lemon Zest

Pour water into the frying pan and add the peaches (skinless), onions and the lemon zest. Cook over a low-medium fire, stirring until the sauce thickens. Add basil, salt, and pepper to taste.
Keep in mind that the peaches remain as large as possible. Do not make a peach paste.

Pour the sauce over the chicken breast

Take the sauce out and pour it over the fried chicken breasts. Let it stay for 3 to 5 minutes. Bon appétit!
