4 Boneless Slices of Chicken Breast
1/3 Cup All-purpose Flour
2 Tablespoons Parsley - Fresh minced
1/4 Teaspoon Fresh Black Pepper
3.5 Tablespoons Extra-Virgin Olive Oil
1 Onion Big, thinly sliced
1/2 Teaspoon Salt
1 Bay Leaves
2 Tablespoons Butter
8 Ounces Mushrooms Sliced
3 Sprigs Parsley - Fresh
2 Tablespoons Tomato Sauce
2 Cloves Garlic
1/2 Cup Dry White Wine
1 Cup Chicken Stock Low Sodium is recommended
1 Can Diced Tomatoes
1/2 Juiced Lemon

Ingredients

Steps for Napoleon’s Chicken Marengo with Mushrooms

Chicken and flour in a food storage bag

After gathering all the ingredients, put the Chicken and flour in a food storage bag like in the picture. Shake the bag to coat the pieces and set them aside. You'll use it later on.

Sauté the onions and sliced bell pepper

In a large fry pan sauté the onions and sliced bell pepper in one to two tablespoons of the extra virgin olive oil, until it gets translucent. Then remove it on a plate.

Add the coated chicken to the pan

Add the remaining extra-virgin olive oil to the pan and place it on a frying pan over medium heat. Add the coated chicken (prepared at step 1) to the pan and sauté, turning frequently, until browned. Then remove the chicken breasts to a plate and set aside for further use.

Add the mushrooms to the fryer

Set the heat over medium to low. Add the butter to the pan and then add the mushrooms. Sauté until are tender and lightly browned. Should not take to long. This step is depending on what mushrooms you bought.

Blend the chicken stock, tomatoes, lemon juice, and tomato paste

Add the garlic cook for about 1 minute and then pour the wine into the pan. Cook until almost evaporated.
After the wine is evaporated, add and blend the chicken stock, tomatoes, lemon juice, and tomato paste. Bring to a boil.

Add the chicken and vegetables back to the pan

Add the chicken and vegetables back to the frying pan along with the fresh parsley sprigs and bay leaf. Add salt and pepper to taste.
Reduce the heat to low temperature. Cover the frying pan and simmer until the chicken is thoroughly cooked.

At first, the original recipe was served with a garnish of fried eggs and shrimp or crawfish. Nowadays, the recipe is modified and served with pasta, egg noodles, or rice. No matter what garnish you choose, I selected the recipe for chicken Marengo to have in its composition mushrooms for a better taste (from my point of view). I have tried more garnets in order to obtain an American flavor with a genuine French taste… So in this recipe, I used Mushrooms, for a perfect combination with Chicken Marengo and a balanced Ameri-French taste.
