Vegan Butternut Squash & Curry Soup

Recipe's Ingredients

Adjust Servings:
1 cup Carrots peeled and sliced
1 cup chopped Onion
1 clove minced Garlic
2 tablespoons Olive Oil
1 tablespoon minced Ginger
2 teaspoons Curry Powder
1/4 teaspoon Cinnamon
1/6 teaspoon Nutmeg
2 medium Butternut Squash peeled, seeded and cut into chunks
3 cups organic Apple Juice
Croutons Ingredients
Extra Virgin Olive Oil
16 slices of Bread Cubes ciabatta bread is recommended
To taste Garlic Powder

Steps for Vegan Butternut Squash & Curry Soup

8 Minutes

Cook the vegetables in a large saucepan

Place a large saucepan over medium-high heat, and add the olive oil. Cook the carrots, onion and garlic until tender (will take about 5 minutes). Add then the ginger, curry, cinnamon, and nutmeg, and cook for 1 minute.

20 Minutes

Add the butternut squash and apple juice

Add the butternut squash and apple juice, heating to boiling. Once the mixture is boiling, cover it and reduce the heat just enough to bubble gently, simmering for 15 minutes or until the butternut squash is tender.

15 Minutes

Prepare the Croutons

For the croutons, drizzle a little olive oil over the bread cubes (ciabatta bread is recommended), pat it in, then finely grate and press some garlic powder on to each side. Place in a dry, non-stick pan and fry until golden. You can use Parmesan cheese if you didn't adopt a Vegan lifestyle.

3 Minutes

Puree the soup

In a blender or food processor, puree the soup mixture, in batches, until smooth.

6 Minutes

The Butternut Squash Soup & Curry is done!

Return to saucepan and heat through for about 5 minutes more. Serve hot or chilled with croutons.

There are three types of people when we’re talking about soups. There are the soups eaters who love these dishes because of the taste, the healthy hunters who eat soups for nutritional benefits, and the ones who eat soups for both reasons. Well, this soup can satisfy the taste of any food critic just because it is a bit crazy and can deliver various flavors with just one “bite”.

Moreover, the recipe is made with “health” in mind, having the best results compared with other soups. By adding 1/8 teaspoon of nutmeg will make the difference between a good bowl of soup and the best one. Another unusual thing about this recipe is that it hasn’t potatoes added. Usually, I like to have potatoes in my soup, but for this recipe, I liked the taste more without them. This doesn’t mean you cannot include potatoes.



A small variation for non-vegans (“meat eaters”)

A variation for this recipe is by add pearl barley, dried pasta, dried porcini, and/or some chopped smoked bacon. The result will be divine! Besides the pasta and bacon (add them to taste), add the other ingredients in small amounts. Don’t over-optimize. Another ingredient you can add is Parmesan Cheese over croutons, instead of Garlic. 



Do you peel butternut squash before adding in the soup?

The butternut squash skin is very tough, and some people prefer to remove it. The downside is the time it takes to peel the skin of the butternut squash, like … forever… To be easier to remove it, place the whole veggie in the microwave before you start preparing it, and set the timer to 2-3 minutes. This way, the skin will be softer and easier to remove. The hard method is to just peel it with a knife or peeling tool, like in this video (Youtube).



Is Vegan Butternut Squash & Curry Soup great for Weight Loss?

If you have a weight loss diet, add the butternut squash soup in your meal plan, and create a healthy diet along with it. 200 grams of cooked butternut squash has only 83 calories, and is an excellent choice if you want to lose weight and body fat.
