Make a marinadeTo make a marinade, mix the garlic, soy sauce, cornstarch, and red pepper in a glass or plastic bowl. Stir in the pork meat. Cover and refrigerate 20 minutes. |

Stir-frying the porkAbout 10 minutes before the rice is done, heat the skillet over high heat 1 to 2 minutes. Add the oil to the hot skillet, then the pork. Stir-fry with a turner or large spoon 5 to 6 minutes, lifting and stirring constantly, until pork is no longer pink. Because stir-frying is done over high heat, you must constantly lift and turn the pork to prevent scorching and to cook evenly. |

Tasty and easy to make, the Spanish rice can be your option to make a great dinner. The second variation is the Mexican Red rice if you are into spicy food and can be chosen because we use pork meat in this recipe. Mexican Rice is almost the same recipe as Spanish Rice, with only a 5% difference between them (regarding the ingredients). Another good choice is to choose couscous as I did in the Teriyaki Pork Tenderloin recipe, being one of the great substitutes for rice when it comes to pork meat.

- Essential Equipment: 2-quart saucepan; 12-inch skillet or wok.
- Save a few minutes by buying broccoli at the salad bar. It’s already cut up, and you can buy only what you need.
- For more flavor and variety, substitute fried rice from the deli or frozen food case for the hot cooked rice.
