Tasty Fried Broccoli, Pork & Rice


Recipe's Ingredients

1 pound Pork Loin or leg
3 cups Broccoli Flowerets or use 1 (16 ounce) bag frozen broccoli cuts
1 cup regular long-grain white Rice
1 clove Garlic
1 big Onion
8 ounces whole Water Chestnuts 1 can
1 tablespoon Soy Sauce
2 teaspoons Cornstarch
1/2 teaspoon ground Red Pepper cayenne
1/4 cup Chicken Broth
1/2 cup Peanuts
2 tablespoons Vegetable Oil
2 cups Water

Ingredients

Steps for Tasty Fried Broccoli, Pork & Rice

Prepare the pork, garlic, onion and chestnuts

Cut and discard most of the fat from the pork. Cut pork into 2 × 1 × 1/8-inch slices. Peel and finely chop (or smash) the garlic. Peel the onion (cut each into 8 pieces), then set aside. Drain the water chestnuts in a strainer.

Make a marinade

To make a marinade, mix the garlic, soy sauce, cornstarch, and red pepper in a glass or plastic bowl. Stir in the pork meat. Cover and refrigerate 20 minutes.

While the pork is marinating, prepare the Rice

Heat the rice and water to boiling in the saucepan, stirring occasionally to prevent sticking. Once the mixture is boiling, reduce heat just enough so mixture bubbles gently. Cover and cook about 15 minutes or until rice is fluffy and tender. If you want a better rice recipe, check the links included in the directions (Spanish or Mexican rice).

Stir-frying the pork

About 10 minutes before the rice is done, heat the skillet over high heat 1 to 2 minutes. Add the oil to the hot skillet, then the pork. Stir-fry with a turner or large spoon 5 to 6 minutes, lifting and stirring constantly, until pork is no longer pink. Because stir-frying is done over high heat, you must constantly lift and turn the pork to prevent scorching and to cook evenly.

Add the broccoli to pork mixture

Add the onions, broccoli and water chestnuts to pork mixture. Stir-fry 2 minutes.

Heat to boiling again

Stir in the broth, and heat to boiling over high heat. Stir in the peanuts with 3 minutes before taking aside from heat. Serve the pork mixture with rice. Enjoy!

Let me tell you though why using pork meat instead of other kinds of meat. Pork is a bit unhealthy if you ask me, but it also has the best taste of all. However, it has its advantages like vitamin B1 in pork is in high quantity, the presence of vitamin Riboflavin, vitamin B6, helps in producing red blood cells, iron vitamin, zinc, is also a good source of protein and amino acids. Eaten with rice makes this choice one of the best. 

 

As per practo, the truth is that the pork meat is very healthy. “It is high in protein and essential vitamins, minerals and amino acids good for overall health. Lean pork, when trimmed of visible fat, is nutrient-dense, satisfying, and good for you.

 

 

 

Using variations for the rice

I like to cook the rice as simple as possible for this recipe (look into steps). But if you want to use variations, I have two in mind. Spanish rice is the best choice for this recipe. Tasty and easy to make, the Spanish rice can be your option to make a great dinner. The second variation is the Mexican Red rice if you are into spicy food and can be chosen because we use pork meat in this recipe. Mexican Rice is almost the same recipe as Spanish Rice, with only a 5% difference between them (regarding the ingredients). Another good choice is to choose couscous as I did in the Teriyaki Pork Tenderloin recipe, being one of the great substitutes for rice when it comes to pork meat.

 

 

 

Notes and Tips

  1. Essential Equipment: 2-quart saucepan; 12-inch skillet or wok.
  2. Save a few minutes by buying broccoli at the salad bar. It’s already cut up, and you can buy only what you need.
  3. For more flavor and variety, substitute fried rice from the deli or frozen food case for the hot cooked rice.
