Lemon Cream Pie with Graham Cracker Crust

Recipe's Ingredients

2 cups Heavy Whipping Cream
1 can Sweetened Condensed Milk 14 ounce
1/2 cup juice from a Lemon
16 Graham Cracker Squares
1/4 cup Margarine 1/2 stick melted
2 tablespoons Sugar
You can also add
Whole Strawberries for garnish
2 teaspoons grated peel from Grated Lemon Peel
Few drops of Yellow Food Color

Steps for Lemon Cream Pie with Graham Cracker Crust

20 Minutes

Refrigerate the Whipping Cream

Pour the whipping cream into a large bowl, and place in the refrigerator to chill. The whipping cream will whip better in a cold bowl.

Prepare Graham Cracker Crust

Heat the oven to 350º. Place a few crackers at a time in a plastic bag. Seal the bag, and crush crackers into fine crumbs with a rolling pin or bottle. Mix the crumbs, sugar, and the margarine in a medium bowl. Press firmly and evenly on the bottom of the square pan. If using a pie pan, press crumb mixture against bottom and side of the pan. Bake 10 minutes and then let it cool.

Mix the Milk and Lemon Juice

While crust is cooling, continue with mixing the milk, lemon juice and lemon peel (if desired) in a small bowl, and set aside.

If you want to add food color

Add the food color to the whipping cream. Beat the whipping cream with the electric mixer on high speed until stiff peaks form.

Gently Mix the new combination

Gently pour the lemon mixture over the whipped cream. To fold together, use a rubber spatula to cut down vertically through the whipped cream, then slide the spatula across the bottom of the bowl and up the side, turning the whipped cream over. Rotate the bowl one-fourth turn, and repeat this down-across-up motion. Continue mixing in this way just until ingredients are blended.

Cover and refrigerate the Lemon Cream Pie

Pour the folded mixture over the crust. Cover and refrigerate at least 2 hours but no longer than 48 hours.

Cut dessert into 3-inch squares. Garnish each serving with a strawberry. Cover and refrigerate any remaining dessert.

Another variation of the name for this recipe is Lemon Cheese Pie with Graham Cracker, but I took out the Cheese and added whipping (heavy) cream. As my followers know, the changing of ingredients doesn’t make the dish worse, but it can do it better or a variation of the former recipe. Think about it, about 73% of the American Recipes are variations from originals. Therefore, this Lemon cream (instead of Cheese) Dessert will make you lick your fingers… sort of.

You also can add a few drops of yellow food color or/and whole strawberries for garnish. Since 2018, I started to change my own recipes, as well as other recipes that I loved and cooked. Since then I made a habit to do this often, and until now I have had only “victories“. Try out this Lemon Cream Dessert with Graham Cracker Crust and let me know what you think about it.



Notes and Tips for Lemon Cream with Graham Cracker Crust

  • Essential Equipment: 9-inch square pan or 9-inch pie pan; electric mixer or hand beater.
  • Be sure to purchase sweetened condensed milk, not evaporated milk. Both are used very differently in recipes.
  • Instead of using graham crackers, purchase packaged graham cracker crumbs at the supermarket, and use 1 1/4 cups of them in the crust.



Can you freeze or refrigerate this kind of dessert?

Sincerely, I never froze it. The lemon cream with graham cracker crust can be frozen for a short period, but it is better to refrigerate it instead. It can be refrigerated for up to 3 days… not more.



What to use for a better design?

If you want to show off or have a modern look dessert, you can add the following fruits:

  1. Whole Strawberries: Place them symmetrically all over the lemon pie. I also tried to write a name’s initial, that if you celebrate your kid’s/husband anniversary. You can also place them in a spiral-like design, starting from the center of the pie.
  2. Whole+Sliced Strawberries: Here is another idea to design the lemon cream pie – Place whole strawberries in the middle of the pie, then gradually cut them when coming to extremities. At the edge of the pie, near the crust, you should have only slices of the strawberries.
  3. Try out other fruits: You can also design the lemon cream pie with avocado (adds also a great flavor combo), kiwi, blueberries, banana, and apple.
  4. Mixed fruits: If you want more flavor for your taste buds, mix all the fruits from no.3 + strawberries. The taste is incredible, also the design. Cut the fruits into cubes.



Can it be eaten while I’m following a slimming diet?

While 80% of my recipes are slimming-friendly, this one is not. With more calories than my other dessert recipes, I do not recommend including it in your weight-loss meal plan. I know, it is frustrating, but maybe you can prepare it only after your diet period :D.



Wrapping up
