Prepare Graham Cracker CrustHeat the oven to 350º. Place a few crackers at a time in a plastic bag. Seal the bag, and crush crackers into fine crumbs with a rolling pin or bottle. Mix the crumbs, sugar, and the margarine in a medium bowl. Press firmly and evenly on the bottom of the square pan. If using a pie pan, press crumb mixture against bottom and side of the pan. Bake 10 minutes and then let it cool. |

Another variation of the name for this recipe is Lemon Cheese Pie with Graham Cracker, but I took out the Cheese and added whipping (heavy) cream. As my followers know, changing the ingredients doesn’t make the dish worse, but it can do it better or a variation of the former recipe. Think about it, about 73% of the American Recipes are variations from originals. Therefore, this Lemon cream (instead of Cheese) Dessert will make you lick your fingers… sort of.
You also can add a few drops of yellow food color or/and whole strawberries for garnish. Since 2018, I started to change my own recipes, as well as other recipes that I loved and cooked. Since then, I have made a habit of doing this often, and so far, I have had only success and great reviews from those who have tried it. Sincerely, I never froze it. The lemon cream with graham cracker crust can be frozen for a short period, but it is better to refrigerate it instead. It can be refrigerated for up to 3 days… not more.
What to use for a better design?
If you want to show off or have a modern look dessert, you can add the following fruits:
- Whole Strawberries: Place them symmetrically all over the lemon pie. I also tried to write a name’s initial, that if you celebrate your kid’s/husband anniversary. You can also place them in a spiral-like design, starting from the center of the pie.
- Whole+Sliced Strawberries: Here is another idea to design the lemon cream pie – Place whole strawberries in the middle of the pie, then gradually cut them when coming to the extremities. At the edge of the pie, near the crust, you should have only slices of strawberries.
- Try out other fruits: You can also design the lemon cream pie with avocado (also adds a great flavor combo), kiwi, blueberries, banana, and apple.
- Mixed fruits: If you want more flavor for your taste buds, mix all the fruits from no.3 + strawberries. The taste is incredible, also the design. Cut the fruits into cubes.
Can it be eaten while I’m following a slimming diet?
While 80% of my recipes are slimming-friendly, this one is not. With more calories than my other dessert recipes, I do not recommend including it in your weight-loss meal plan. I know, it is frustrating, but maybe you can prepare it only after your diet period :D.
