Prepare the onion and the red bell pepper

Peel and chop the onion. Cut the red bell pepper lengthwise in half, and cut out seeds and membrane. Chop the red bell pepper.

Prepare the Rice

Heat the oil in the skillet over medium heat 1 to 2 minutes. Cook the onion and uncooked rice in the oil for about 5 minutes, stirring frequently until rice is golden brown.

Stir in the other ingredients

Remove the skillet from the heat. Stir in the red bell pepper, water, salt, chili powder, garlic powder, and tomato sauce. Heat to boiling over boiling heat, stirring occasionally. Once the mixture is boiling, reduce heat just enough so mixture bubbles gently. Cover and cook about 25 minutes, stirring occasionally, until rice is tender and tomato sauce is absorbed. You may have to lower the heat as the mixture becomes thicker. Enjoy!

About Mexican Red Rice Side Dish Recipe

Although it is called “Mexican Red Rice“, this dish is also called Spanish rice but is virtually unknown in Spain. Maybe here is confusion among people who are searching for this particular recipe. Mexicans or Mexican food lovers don’t use the term “Spanish rice”, the dish is usually known simply as Arroz  (“rice“) or Arroz-Rojo (“red rice“) in Mexico. It is 95% the same recipe as Spanish Rice, but not entirely. The only difference between them is the amount of chili powder, red bell pepper (instead of green), and it doesn’t have Cheddar Cheese in the Mexican form.  This is a great side dish and can be made along with pork or chicken meat. It is best to have also some tortillas at home to try and wrap them up.
