About the vegetarian baked potatoes with cheese recipe

I like to change the meal type very frequently, probably because of my job, but I also like to do this… more variety in our lives cannot harm, on the contrary. Today I was wondering what I could cook with a few ingredients. I was wondering because I didn’t have time to go to the store and I wanted to prepare something with 3-4 ingredients. I’ve had some sweet potatoes, low-fat milk and cheese, some onions and some herbs. I thought of inventing a new recipe, one that would delight family members and yet be simple, even vegetarian, or used as a side dish. I came up with the idea of combining sweet potatoes with white ones and using the oven instead of direct fire or steaming, as an old recipe from French cuisine. The result was this vegetarian baked potatoes with cheese, and by the way, the flavor is awesome!

What goes well with baked potatoes and cheese if I’m not vegetarian?

This recipe is a great side dish, therefore, you can serve the baked potatoes & cheese with beef meat, fish, chicken or vegetarian protein dish and add some green vegetables or a salad to make a complete meal. If you choose to eat with a salad, choose a salad with at least 2–3 vegetables.

Tips for selecting in-season vegetables

Depending on the season you decide to make the risotto with chicken meat, you can choose the best vegetables. As a secret of mine, I prepare this risotto at home only when I find the right ingredients for my Greek Salad recipe. Search the vegetables from local farmers to reduce your shopping budget and support them. But let’s see what are the best in-season veggies (generally):

  • Spring: Asian vegetables, Asparagus, Beetroot, Broad beans, Coriander, Kale, Lemongrass, Peas, Rhubarb, Rosemary, Salad greens, Thyme, Tomatoes, Zucchini.
  • Summer: Basil, Carrots, Cucumbers, Mint, Mushrooms, Sweet corn, Tumeric, Radish.
  • Autumn: Baby Cos, Capsicums, Chard, Chestnuts, Eggplants, Galangal root, Garlic, Ginger, Potatoes, Pumpkin, Salad greens, Silverbeet, Squash, Sweet potato, Walnuts.
  • Winter: Artichoke, Beans, Broccoli, Broccolini Brussels sprouts, Cabbage, Cauliflower, Fennel, Heirloom tomatoes, Leeks, Lemons, Limes, Macadamias, Onions, Parsley, Bay leaf, Parsnips, Turnips, Zucchini.

Well, you might find everything in the supermarket but is healthier to buy seasonal veggies directly from farmers (mile 0).

I am a vegetarian, why should I try this Baked Potatoes?

I cannot convince you until you try these baked potatoes. Yes, the dish it’s very simple, but the taste it’s more than you imagine. When you want to try something new from French cuisine, try this recipe and you’ll see what I am talking about. Add also a salad and the combined flavors will “blow” your taste buds.
