Vegetarian Mushroom Pie


Recipe's Ingredients

Adjust Servings:
4 big & sliced Mushrooms
1/2 chopped Onion
1 tablespoon crushed Garlic
2 tablespoons of Margarine
1/2 cup Vegetable Stock
2 tablespoons Plain Flour
2 cups Soy Milk
2 sheets puff Shortcrust Pastry
Sprinkle of mixed herbs
to taste Spinach
Variations
Instead of margarine, add Olive Oil
Instead of soy milk, add Almond Milk

Steps for Vegetarian Mushroom Pie

Prepare the Mushrooms

Preheat oven to 330°F. Chop the veggies and heat the margarine in a saucepan, add in the onion and garlic, and cook over medium heat for 2 minutes. Then add in the mushrooms and sauté.

Prepare the "Sauce"

Mix the vegetable stock and flour together to form a thin sauce, gradually pour into the pan, stirring occasionally for about 5 minutes. Then, gradually add in the soy milk stirring occasionally. If mixture becomes too runny add in extra flour and mix together with the soy milk.

Cook the mixture

Allow mushroom mixture to cool for 5 minutes. Grease a 20cm deep pie dish and place the pastry inside ensuring all areas are covered. Once the mushroom mixture has cooled pour into the pie dish and then cover the dish with a top layer of pastry.

Prepare the pie

Push down the pastry along the edges of the dish. Use a fork to pierce small holes in the top of the pastry and sprinkle with mixed herbs. Place in the oven and bake for 15 minutes until golden brown

One of the most delicious pies I have ever made is this vegetarian mushroom pie. It also has a variation with meat in it, but for that recipe, I’ll make a different post. Anyway, the mushroom pie is a simple and tasty snack with a lot of health benefits due to the main ingredient, and I do recommend making it at least once every couple of months or more if you want. You will not be disappointed!

About the Vegetarian Mushroom Pie Recipe

Besides the fact vegetarian mushroom pie has a great taste and can be prepared with cheap ingredients, mushrooms are well known for their health benefits, making this pie a great snack between meals. The mushroom pie should be well-baked, with a crispy and browned surface, and with a tasty and well-seasoned filling.

It is a great vegetarian snack that goes great with a cold beer or buttermilk. Regarding the filling, there is nothing sophisticated: fresh or canned mushrooms, cut to your liking, seasoned with your favorite spices, a little onion, and if you want to add more vegetables than the ones shown in this recipe.

Before I go further, I’d like to mention if you don’t have soy or almond milk, regular cow’s milk can be used. This recipe can be made gluten-free by using gluten-free flour, gluten-free pastry, and gluten-free stock.

Preparing the Mushrooms for Cooking

Rinse the mushrooms with cool water, but do not soak them because they will absorb water and become mushy. Dry thoroughly. You do not need to peel them, just cut them off and discard the end of each stem. Cut each mushroom lengthwise into 1/4-inch slices or let them whole, without cutting (your choice).
