This recipe is older than me, but I have preserved it due to its special taste and flavors. This Ambrosia fruit salad has grapefruits, nectarines, pineapple, and grated coconut.

Steps for Ambrosia Fruit Salad Dessert

Prepare the vegan cream

Place the can of coconut cream into your refrigerator and leave it 12 hours. When you want to prepare the cream, take it out without shaking. The cream part has separated from the water and risen to the top, scoop it out. Starting at slow speed with a mixer, gradually increase speed until you achieve a whipped cream consistency. Done!

Prepare the fruits

Peel the nectarines, grapefruits and pineapple. Section and slice the nectarines and grapefruits, and chop the pineapple.

Mix them

Mix the grapefruits, nectarines, pineapple and grated coconut in two serving bowls. Reserve 2 Tablespoons of coconut and add the vegan cream. Sprinkle on top of each bowl 1 tablespoon of coconut. Enjoy!

Every time I have some mandarins, oranges, grapefruits, or all of them, I cannot think of another better recipe than Ambrosia fruit salad. It is so simple to prepare and the taste is awesome. Apart from citrus fruits, the recipe also contains pineapple and coconut, giving a special and exotic flavor. Some cooks are using also marshmallows, but my great-grandmother didn’t. You’ll love it, trust me!  

 

History of Ambrosia Fruit Salad

Below I’ll show you the myths about the Ambrosia fruit salad, but the truth is Americans were the first who invented the first recipe and the name was taken from Greek history.

As per Wikipedia, in the ancient Greek myths, ambrosia (meaning “immortality”) is the food or drink of the Greek gods, often depicted as conferring longevity or immortality upon whoever consumed it. It was brought to the gods in Olympus by doves and served by either Hebe or Ganymede at the heavenly feast. Ambrosia is sometimes depicted in ancient art as distributed by a nymph labeled with that name and a nurse of Dionysus. In the myth of Lycurgus, the king attacked Ambrosia and Dionysus’ entourage, causing the god to drive Lycurgus insane.

 

 

Variation for a more complex Ambrosia salad dessert

Besides the citrus fruits and pineapple, for more flavor add some maraschino cherries, bananas, strawberries, and crushed pecans. This will give more taste to this dessert, but the salad will have too many fruits and your taste buds will not be able to distinguish one from another. Some people love this, some are not! Another Ambrosia Salad variation can also include mayonnaise, whipped cream, yogurt, or pudding, making from it an irresistible dessert but with a cost… the dessert will be less healthy.

Due to its fruit-only ingredients, this recipe can be made by vegan or vegetarian people, being a delicious dessert and full of flavor.
