- 4 medium Nectarines
- 2 medium Grapefruit
- 1 cup chopped Pineapple - Fresh
- 1/4 cup grated Coconut

Prepare the vegan cream
Place the can of coconut cream into your refrigerator and leave it 12 hours. When you want to prepare the cream, take it out without shaking. The cream part has separated from the water and risen to the top, scoop it out. Starting at slow speed with a mixer, gradually increase speed until you achieve a whipped cream consistency. Done!
Prepare the fruits
Peel the nectarines, grapefruits and pineapple. Section and slice the nectarines and grapefruits, and chop the pineapple.
Mix the grapefruits, nectarines, pineapple and grated coconut in two serving bowls. Reserve 2 Tablespoons of coconut and add the vegan cream. Sprinkle on top of each bowl 1 tablespoon of coconut. Enjoy!

Every time I have some mandarins, oranges, grapefruits or all of them, I cannot think to another better recipe than Ambrosia fruit salad. It is so simple to prepare and the taste is awesome.
