1.5 medium Tomatoes
1/2 medium Cucumber
3 medium Green Onion with tops
1 small Green Bell Pepper
1 small Red Pepper
1/4 cup chopped Ripe Olives if desired
Garlic Vinaigrette Dressing
1 clove Garlic
1/4 cup Rice Vinegar
2 tablespoons Water
2 tablespoons Olive Oil
1/2 teaspoon Sesame
1/2 teaspoon Salt
Variations
Instead of Rotini Pasta, use Rotelle Pasta
Instead of olive oil, use Vegetable Oil
Instead of sesame, use Vegetable Oil
Instead of rice vinegar, use white Vinegar

Steps for Italian Rotini Salad with Special Dressing

Prepare Garlic Vinaigrette Dressing

Peel and finely chop the garlic. Shake garlic and remaining ingredients in a tightly covered jar or container. Shake again before pouring over vegetables and pasta.

Prepare the pasta (Rotini or Rotelle)

Fill the Dutch oven about half full of water, and add 1/4 teaspoon salt if desired. Cover and heat over high heat until the water is boiling rapidly. Add the pasta and heat to boiling again. Boil uncovered, stirring frequently, 8 to 10 minutes for rotini, 9 to 11 minutes for rotelle, until tender.

Prepare the vegetables

While the water is heating and pasta is cooking, chop the tomato and cucumber, peel and chop the onions. Place the vegetables in a large bowl.

Prepare the Bell Pepper

Cut the bell pepper lengthwise in half, and cut out seeds and membrane. Cut bell pepper into pieces, and add the bowl where vegetables are.

The Rotini salad is almost done!

Drain the pasta in a strainer or colander, and rinse thoroughly with cold water. Add pasta in the bowl. Add also the olives - if desired.

Pour the Special dressing over the Rotini Pasta Salad

Pour the dressing over the vegetables and pasta, and mix thoroughly. Cover and refrigerate about 30 minutes or until chilled.

Not only because he is one of the greatest chefs out there, but also have a lot of dishes on the menu, and that’s because have almost all types of pasta + Italian cooking styles. Variation: Ranch Pasta Salad

Use about 1/2 cup ranch dressing from the supermarket instead of the Garlic Vinaigrette Dressing. The rest is the same as below, with the same ingredients as the rotini salad.

 

 

Why using Rotini Pasta

This shape is particularly popular with children but is also a helpful shape as its twists can capture sauces very well. Rotini pasta can be paired with most sauces, including tomato sauces, oil-based sauces, or cream ones. It also works well in pasta salads, like this one. It holds meat and cheese well and can work well in a baked pasta dish. This type is perfect for my recipe, and also has a more significant impact on dish design.

 

 

Can I prepare it for weight-loss purposes?

Of course, you can prepare the rotini pasta salad for three days in a row if you want. With only 154 Cal per serving, it is perfect for summer days and will keep you full for a more extended period. The Fat could be lower to be slimming-friendly and a lot more suited for this, but it will do ok just as it is.

 

 

Can I refrigerate or freeze it?

If you want to refrigerate or freeze the rotini pasta salad, please remember not to pour the sauce over it. Refrigerate the entire dish, without dressing, for up to 3-4 days. To freeze it, store the leftovers in a tight container, and freeze for up to 2 months. Every time you need to take out the salad from the refrigerator or freezer, prepare a “fresh” dressing.

 

 

Notes and Tips

  1. Essential Equipment: Dutch oven (about 4-quart size).
  2. The water heated for cooking the pasta will boil sooner if it is covered with a lid.
  3. Wrap any leftover onions and cucumber in plastic wrap and store them in the refrigerator.
