Steps for Quick Vegan Potato Soup

Prepare the Vegetables

Peel the potatoes and cut them into cubes. Then cut the green onion. If you decide to use also the carrots and red bell pepper, cut them into small pieces.

Cook the veggies

Place potatoes and onion (carrots and red bell pepper also if you chose to use them) in a saucepan with just enough broth to cover them and cook until tender.

Add the milk and liquid aminos

With 10 minutes before taking the pan out from the heat, add the desired amount of soy milk (or rice milk if you choose this type) to make a creamy consistency. Season with liquid aminos.

Pour into serving bowls and garnish with minced fresh parsley. For a better design, garnish also with minced carrots and leaves from the green onion.

We all have “vegetative” days, “I don’t want to do anything” moments, and so on. But we still need to eat, therefore, a quick preparing soup recipe is what you search for. I prepared this vegan potato soup today because of lack of time, but also I wanted to prepare something tasty for my family. The ingredient list is smaller than many other recipes, needing only potatoes, soy or rice milk, liquid aminos, parsley, and the best homemade vegetable broth (in-link recipe).

 

 

Vegan potato soup

I’ve not adopted the vegan lifestyle, but from time to time I keep my family away from meat (between 3 to 6 days). Therefore I need to prepare tasty vegan soups and main courses. Regarding this vegan potato soup, it is full of flavor even though it has few ingredients, is tasty, and is great for a weight-loss diet, bur body fat faster or body detox.

 

 

Potato soup with my special homemade vegetable broth

As I noted in the recipe for homemade vegetable broth, I always use distilled water instead of any other kind. I think this gives a greater taste and makes the other ingredients to leave the exact flavors that are supposed to. Another secret of mine is to let the potatoes with skin on them, don’t peel it off.

Most of the homemade vegetable broths are made with simple water and peeled potatoes, but I ask you, don’t you want a better and greater vegetable broth, with more flavor? Well, I do like to be on a pedestal when my family is happy with my cooking and feels great.

The last thing I’ve wanted to share with you regarding this recipe is, besides carrots and onions, I add balanced amounts of seasonings to achieve the perfect result. The great think about this recipe is it can be prepared also for a vegetarian or vegan lifestyle. FYI: Broth may be frozen or kept in the refrigerator for one week.

 

 

Health Benefits for vegan potato soup

  1. Potato health benefits: The potato’s fiber, potassium, vitamin C, and vitamin B6 content, coupled with its lack of cholesterol, will strengthen your heart and keep it away from diseases. But, even the potatoes are healthy, you should not eat more than 4 days a week this veggie.
  2. Onion health benefits: Onions are low in calories but high in vitamins and minerals. It’s one of the best veggies for Heart Health, it is loaded with antioxidants, contains cancer-fighting compounds, helps control blood sugar, boosts bone density, has antibacterial properties, and boosts digestive health.

 

 

Weight loss with potato soup

The vegan potato soup diet may be effective for short-term weight loss, but it’s not a long-term solution. Potatoes are nutritious, but they don’t contain all the nutrients you need for optimal health, even if we add onions and rice milk (as I noted in this recipe).
