1 Lb. Eggplant1 big globe or 3-4 Asian ones
2 medium sweet Red Pepperseeded and cut them lengthwise
1/4 cup Onionchopped
4 medium Cherry Tomatoescut in half
1/4 cup Parsley - FreshItalian flat leaf, chopped
2 cloves of Garlic
4 tablespoons extra virgin Olive Oil
Prepare the veggies
You can use 1 globe of large eggplant or 3-4 Asian ones. Cut into 1-inch pieces. Then cut red peppers lengthwise, the cherry tomatoes in half, mince the garlic and chop the onion and parsley.
Fry the veggies
In a medium frying pan over medium-high heat, heat the olive oil. When the oil is hot, add the onion and garlic and sauté until the onion is limp about 1 minute. Add the peppers and eggplant, stirring often until the eggplant has softened and browned a bit, 10 to 12 minutes.
Stir in the tomatoes, scraping up any clinging bits. Cover, reduce the heat to low and cook until the eggplant is cooked through and the tomatoes have thickened slightly about 2 to 3 minutes. To serve, spoon over rice and garnish with the parsley.
