Vegetarian Stuffed Mushrooms

4 large flat Mushrooms
4 medium Eggs
1/2 cup tinned Black Beans
1/2 cup grated Cheddar Cheese
1.5 teaspoons crushed Garlic
2 teaspoons finely crushed Bread Crumbs sprinkle on top
1 teaspoon Fresh Dill
to taste Salt
Instead of Black Beans (choose one)
1/2 cup Brown Lentils
1/2 cup Green Lentils
Instead of dill
Add any seasoning you like
Instead of Cheddar Cheese (choose one)
1/2 cup grated Parmesan Cheese
1/2 cup grated Parmigiano Cheese
1/2 cup grated Grana Padano
1/2 cup grated Mozzarella Cheese

Steps for Vegetarian Stuffed Mushrooms

Prepare the Mushrooms

Preheat the oven at 330°F. Wash and rinse the mushrooms, then remove the stalks and finely dice them, placing into a bowl.

Prepare the mixture

Crack eggs into the bowl and give a stir. Add black beans or lentils (must be prepared ahead), herbs or spices (see the ingredients), most of the Cheddar Cheese and mix well.

Fill the mushrooms with the mixture

Place the mushrooms (underside up) on a tray lined with baking paper and fill with the mixture. Sprinkle with the rest of cheddar cheese (or any other cheese from ingredients list) and some bread crumbs.

Bake the vegetarian stuffed mushrooms

About Vegetarian Stuffed Mushrooms recipe

The Vegetarian Stuffed Mushrooms dish has been very popular in my restaurants, and my family loves it as well. It’s a very simple recipe, with simple ingredients that can be changed to your likings (use what cheese you want or like, can be seasoned with garlic or anything you want – see recipe’s steps), and can be made in less than an hour.

Believe it or not, this vegetarian goodness has a lot of health benefits due to the main ingredient (mushrooms), benefits shown below. In my restaurants, 6 out of 10 side-dishes are vegetarian stuffed mushrooms. But I don’t think all my clients know the health benefits involved, but recognize a great flavor when they taste one. Besides the fact you can choose any cheese you want, I like how Gouda or Cheddar cheese can be combined with mushrooms, especially for this recipe.

Moreover, I like to have only one season on them, that being garlic. To balance the flavors, I have added some black beans in the recipe, to make it even tastier… but if you cannot find or like the black beans, lentils will give also a great and balanced flavor. The piece of resistance (pièce de résistance – French) is the finely crushed breadcrumbs, sprinkled uniformly on the cheesy mushrooms. Trust me, the stuffed mushrooms are worth your while, whether you want to use it as a side dish or as a simple vegetarian meal. This recipe can also be made gluten-free by omitting the bread crumbs.

 

 

Mushrooms’ Health Benefits

The mushroom is part of the super-vegetable table, a hybrid veggie with great vitamins and minerals intake. Mushrooms have a positive influence and boost the immune system health, antioxidant may help you live longer, help you lose weight, improve digestion, contain a class of proteins called lectins, which are able to bind to abnormal cells and cancer cells and label the cells for destruction by our immune system (great for breast cancer).

 

 

 

Can you freeze the vegetarian stuffed mushrooms?

As long as you don’t bake the stuffed mushrooms (or simply say, don’t make the last step from this recipe), you can freeze them. After you have completed the steps before baking, place them in a baking pan lined with parchment paper and freeze for about three hours. Then, remove the stuffed mushrooms from the freezer and store them in a freezer bag for long-term storage bag for up to two months.

 

 

I already baked the stuffed mushrooms. For how long can I refrigerate them now?

If you baked the stuffed mushrooms, refrigerate them in shallow airtight containers for up to 4 days in the refrigerator. You can also use resealable plastic bags for refrigeration, and if are properly stored, cooked mushrooms will last for even five days in the refrigerator. If you choose to refrigerate them, don’t reheat them… just eat them cold. Reheating the stuffed mushrooms will give you belly problems… you know what I mean.
