Done
2 Minutes

Prepare the Pea Pods

Snap off the stem end of each pea pod, and pull the string across the pea pod to remove it.

Done
11 Minutes

Boil the Baby Carrots

Add 1 inch of water to the saucepan. Cover and heat the water to boiling over high heat. Add the baby carrots, cover, and heat to boiling again. Once water is boiling, reduce heat just enough so the water bubbles gently. Cook covered about 4 minutes or until carrots are crisp-tender when pierced with a fork. Do not drain the water.

3
Done
4 Minutes

Add the Pea Pods in the saucepan

Add pea pods to carrots in a saucepan. Heat uncovered until water is boiling again; continue boiling uncovered 2 to 3 minutes, stirring occasionally, until pea pods are crisp-tender. Pea pods cook very quickly, so be careful not to overcook them. Drain carrots and pea pods in a strainer, then return to saucepan.

The Dilled Carrots with Pea Pods is almost done!

After draining the carrots and pea pods, put them back in the saucepan and stir in margarine, dill, and salt. Stir until the margarine is melted. Enjoy!

About Baby Carrots with Pea Pods

Baby carrots with pea pods is great if you want to have a healthy side dish. Over these goodies, sprinkle some dill and you’ll have a royal meal. My husband doesn’t like vegetables so much (as a side dish), but the combined flavors from carrots and pea pods left him with a good impression regarding this recipe. After you try this recipe, write a review, please. I’ll be glad to know your opinion. You can also try my recipe for Fried Green Beans, a great side dish, just like this one. If you want to add meat to the recipe, I recommend turkey or chicken, but pork works also ok (depending on your taste).

Health benefits

Besides the fact you can add any type of meat to this recipe, you will make an important contribution in terms of body health. The carrots, in our case baby carrots, have great health benefits including Vitamin A, vitamin B6, potassium, and vitamin K. On the other “corner“, the pea pods are an excellent source of protein, support healthy blood sugar control, helps digestion, and may be protective against some chronic diseases like cancer, diabetes, or heart disease.

Add some Glaze to the dish

You can prepare the baby carrots with pea pods ina buttery-sugar glaze. Melt butter in a large skillet. Add 1⁄2 teaspoon cornstarch with 1 tablespoon butter, and stir together. Add the cooked carrots, snow peas, and 2 tablespoons of brown sugar to the skillet. Heat and stir for 1 to 2 minutes. You can also sprinkle some sesame seeds over to make it look like a “piece of art”.

Baby Carrots with Pea Pods can be used for Weight-Loss Diets

If you are following a slimming diet, even a strict one, the recipe for baby carrots and pea pods can be used without a problem. It has only 55 Calories, 2.9 Fat content, and 0.5 Saturated Fat… it is like you don’t eat at all. depending on your diet, you can also add some other veggies like mushrooms, bell peppers, or even potatoes.. If your diet isn’t so strict, you may also add chicken or turkey (both helpful with weight-loss programs). Don’t mind its simplicity, baby carrots with pea pods has a great taste.

Notes and Tips

  • Essential Equipment: medium saucepan (about 2-quart size).
  • Snow pea pods are very similar to snap pea pods, and they can be used interchangeably. Both are edible pea pods with tender, sweet peas inside.
  • One 6-ounce package of frozen snow (Chinese) pea pods can be substituted for the fresh pea pods. Thaw them before cooking in step 3.
  • This recipe is great for Vegetarians. It can be prepared also by Vegan persons, but the butter needs to be removed.
