4 rashers Bacon sliced
1 brown Onion chopped
4 Potatoes
4 Chorizo Sausages sliced
1 green Capsicum chopped
2 medium Zucchini chopped
2 x 400g can chopped Tomatoes
1/2 cup Red Wine Pinot Noir
1 teaspoon Basil - Dried
2 medium Carrots
1/2 cup Bread Cubes

Prepare the Ingredients

Slice the bacon and sausages, then chop the onion, capsicum, and zucchini.

Start by mixing the ingredients

Heat the olive oil in a deep pan over medium-high heat, add bacon and onion and cook for 5 minutes or until soft. Add chorizo and cook for further 5 minutes.

Let the stew simmer

Add the remaining ingredients and bring to the boil. Let it simmer for 35 minutes or until potatoes and vegetables are tender. Serve with crusty bread or bread cubes. Enjoy!

To be honest, this isn’t the best stew for weight-loss diets, but this feature is included among many others. If you want to taste something different and add to your meal plan, this is it.

The Chorizo, Bacon, and Potatoes within this stew makes a great combination of flavors and is loved by people who try new recipes every time. Instead of using lean meat, or making this stew only with the vegetables shown in the ingredient list, the bacon and sausages balance the taste by adding new flavors.

Besides meat and vegetables, there is an ingredient that makes this stew unique in every way: red wine! A stew with red wine in it will tender the meat, soften a bit of the vegetables, and will add a great flavor to it. The best red wines for stews are those with moderate tannins: Merlot, Pinot Noir, and lighter-style Cabernets. Heat won’t improve the undesirable qualities of a bad wine: it will accentuate them, therefore, carefully choose your wine for food.

 

 

 

Can I refrigerate the Chorizo & Potato Stew?

Like any other stew or soup, it can be refrigerated up to five days, but I recommend eating it in three days to have the same flavor as it was after you took it out from heat for the first time. However, this stew is unique, and it is better to use “a single portion plastic bags” to ensure that the stew isn’t reheated again and again and again (all of it). Instead, you will reheat only one serving at a time. 

 

 

 

How much weight loss can I expect from this stew?

Well, as I said before, this recipe has included the weight-loss feature. It is more a neutral dish than forced weight loss, meaning you don’t have to worry about getting fat as long as you eat this kind of dish in moderation. If you have a 7-day meal plan for your diet, make sure you place this recipe on day five at lunch. Don’t be scared to eat sausage or bacon if you are on a weight-loss diet, especially when this recipe has red wine as an ingredient. 

 

 

 

Variations & Tips

There are some small variations and tips for this stew. Here, I’ll show them to you one by one:

  1. You can change the chorizo sausages with cajun or any other you like. For my taste, the chorizo sausage adds the best flavor in stews.
  2. You can add green beans or red kidney beans to add more vegetables. This will change the simmering time a great deal. Therefore, it is better to prepare them with a few hours ahead.
  3. The best red wine for this chorizo & potatoes stew is Merlot, Pinot Noir, and lighter-style Cabernets. You can use any other brands, but make sure the taste is good, and the wine has great qualities as well.
  4. Slice the bacon into small pieces. If you want to fry it before adding in the stew for simmering, be my guest (sometimes I also do this). By doing so, you will get crispier bacon (most men are in love with this style of cooking, no matter if you add bacon to stews or eat it simply with eggs).
