2 Crushed Garlic

Preparing the Chicken Breasts

First is first, preheat the oven to 400 degrees. Put 1/4 cup of butter in a casserole dish and melt it in the microwave. Meanwhile, sprinkle the Chicken Breasts with 1/2 tablespoon of Basil and rub them with crushed Garlic (2 should be enough). You can use the variation, sprinkle the chicken breasts with Oregano instead of Basil. Add Salt and Pepper to taste. Turn the chicken breasts to coat on both sides in butter.

Put the Chicken Breasts in the Oven

Put the Chicken Breasts in the oven and cook for approximately 20 minutes uncovered, until is golden brown. Turn upside-down and bake 20 more minutes.

Reduce the heat to 300 degrees

After the chicken breasts have a gold-brown color on both sides, reduce the heat at 300 degrees and cook for another 5 minutes until they are tender. This step duration may change depending on the thickness of the chicken breasts.

Add Lemon - the key ingredient

Take out the chicken breasts from the oven, and squeeze lemon juice (from 2 medium lemons) all over them. Serve with rice, french fries or puree. Bon appétit!

Transforming the Lemon Chicken in Scalopina

At step 2, immediately after turn upside-down the chicken meat, start to prepare the mushrooms. When recipe's step 2 is over, add the cooked mushrooms, sour cream and the lemon juice on top of the chicken breasts. Let it in the oven for 5 minutes and it is done! Step 4 from this recipe will disappear (the one in which you squeeze the lemon over the chicken breasts) because the lemon juice will be already in the mixture poured before step 3 begins.

If you want to cook something quick and tasty, this is it.  Don’t let the simplicity fool you. You need only some garlic cloves, butter, lemons, and basil. If you don’t like basil or want to try something different, you can use oregano instead. The ingredients are in every kitchen, meaning it isn’t too expensive to prepare it. It can be served at lunch or dinner.

 

 

Lemon Chicken for Simplicity Lovers

As I told you before, don’t let the simplicity fool you. This recipe is for those who know the difference between a super taste from a simple recipe versus a not so good flavor from a complex recipe. Well, I know… not all simple recipes have a good taste, but the lemon chicken is wonderful, trust me. I liked cooking all my life, and first I started with these kinds of recipes, simple but tasty.

I remember a weekend, not long ago, some friends wanted to come by and I was thinking to make a complex meal, with lots of ingredients and flavors. But I remembered this recipe, one of those with which I started in the art of cooking, a long time ago. I made it and my friends were delighted. To be honest, I used basil on one half of the chicken and on the other half oregano. Tasty combination!

 

 

What Garnish goes well with Lemon Chicken?

After your cooking is done, you can serve with rice, french fries, or puree. For me, french fries are my favorites, but you can serve them with any food garnish you like. If you choose to serve the lemon chicken with rice, I think one of the best choices is Spanish Rice.

 

 

Transforming the Lemon Chicken in Scalopina

Sometimes I change my mind midway and transform a dish to another one. For me, it is very simple to make this happen because all the recipes are in my mind, but I thought to let you know about this possibility. To transform the Lemon Chicken into Scalopina is very simple. But you need to do this when you still have 25 minutes to go with cooking. You need to have also the following ingredients in order to change the recipe: Mushrooms (white is preferred) and Sour cream with 20% fat (at least).

 

Changing the steps a bit in order to make Scalopina

  1. At step 2, immediately after turn upside-down the chicken meat and bake 20 more minutes, start to prepare the mushrooms. The steps and methods for cooking the mushrooms can be found in my article. I cook the mushrooms by Sautéing, but steaming works too.
  2. When step 2 is over, before continuing with step 3 by reducing the heat to 300 degrees, add the mushrooms, sour cream, and lemon juice on top of the chicken breasts.
  3. Let it in the oven for 5 minutes, and it is done! You’ll have Scalopina instead of Lemon Chicken!
  4. Attention: do not let the mixture with sour cream stay in the oven for more than 7-8 minutes!

 

 

 

Try tomorrow switching to French cuisine

After a great dinner today (if you’ll prepare Scalopina or lemon chicken), tomorrow I recommend switching to French cuisine and prepare my special recipe for Napoleon’s Chicken Marengo with Mushrooms. Italian cuisine followed up by French cuisine the next day will satisfy your family more… This “follow up” between Italian and French is bounded somehow.
